It’s officially summer and berry season, so I want to share with you this delicious blueberry slab pie recipe. After making a different slab pie a few weeks ago for a BBQ, I have been all about the slab pie. I find it easier to make than a normal pie, is perfect for a crowd, and is no mess to eat with your hands. Here, I created a blueberry slab pie topped with stars that would be perfect for the upcoming Fourth of July. To make, I followed this slab pie recipe, but instead of the cherry filling, I chose to use this blueberry filling recipe and swapped the regular flour for tapioca flour for a thicker filling. The results yielded a pie perfect for any summer get-together.
