Chia seeds have been a popular superfood for over a year, but not until recently have I actually tried them. I was out grabbing lunch one day when I impulsively decided to give vanilla chia pudding a try and was pleasantly surprised by how good it tasted. The one I had was a little unhealthy, but I have since made this one at home that is just as good and much healthier. It works great for breakfast or a snack and is even better when topped with fruit.

With the Fourth of July only days away, I thought it appropriate to share this patriotic treat. When I think of summer sweets, I always think of ice cream as it is perfect for cooling you down on a hot summer day. After a recent sweet craving, I made these ice cream sandwiches and swapped out regular vanilla ice cream for this vanilla bourbon one. To make them even more fun, I used a star shape cookie cutter to create a not so normal ice cream sandwich shape. While I loved the vanilla bourbon pairing, I am already planning to make them again with this peanut butter ice cream. Whichever flavor you choose, they are the perfect treat for any Fourth of July get-together.
