Corn Cake Fritters
Growing up in the Midwest, fresh corn on the cob was a summer time staple. We would always buy it freshly picked from stands on the side of the road and eat it that same day. Each summer, I still anxiously await the first corn of the season, as it reminds me of those simple summer days as a child. So, when I saw fresh corn at the farmers’ market recently, I was overjoyed. After enjoying some fresh off the cob, I looked for other recipes to use up my stash of corn. I came across these corn cake fritters and knew I had to make them. Just looking at the pictures made my mouth water and once made, they did not disappoint.
